Morning Everyone!
I hope your weeks are shaping up nicely and you are making some fun plans for the weekend. One thing you must try this weekend are these delicious Peanut Butter crinkle cookies, which are an all time favourite in our house. This recipe comes from the trusty Australian Women's Weekly cookbook and was a childhood favourite of mine. These days I make these sweet treats for family and friends, with a few little alterations.
You Will Need
125g unsalted butter
1/3 cup sugar
1/3 cup brown sugar, lightly packed
1/2 teaspoon vanilla extract
1/3 cup peanut butter *I use crunchy for added texture
1 1/4 cups plain (all-purpose) flour
1 teaspoon bicarbonate of soda
pinch salt

1/2 cup choc chips *my added treat
Method
Preheat oven to 180°C (350°F/Gas 4).
Cream together butter, sugars, vanilla, lemon rind and peanut butter until light and fluffy. Add sifted flour, soda and salt and mix until a stiff dough forms.
Shape heaped teaspoonfuls of mixture into small balls with floured hands, place on a lined oven tray allowing room to spread slightly. Press biscuits down lightly with a fork, first crosswise then lengthwise, for a crinkled effect. Bake in oven for 15 minutes, until golden brown. Remove from oven and cool on tray.
These biscuits are fool proof and sure to be a big hit with the whole family. We made some this past Monday and they where gone by Tuesday, even our neighbours got in on the action! These cookies are not to be missed!
