Corn Fritters served with avocado, rocket and sweet chilli sauce

Morning Everyone! 

This weeks recipe is super simple and very very delicious. These corn fritters are perfect for an easy weekend breakfast and are a real crowd pleaser. 



You will need. 
1 cup self-raising flour

1/3 cup milk






Place flour into a large mixing bowl and make a well in the centre. Use a fork to whisk eggs and milk in a jug and pour gradually into the flour, stirring gently to combine. Fold in corn, chives and fetta. Don’t over-mix or the fritters will be tough.

Over mild heat grease a pan with the butter and place a quarter cup of mixture into the pan. Cook until golden brown underneath (around 2 minutes) then flip. Repeat this step until remaining mixture is gone.

Severe with rocket, avocado and sweet chilli sauce. Enjoy!
