Bunny Nest Macaroons

Happy Thursday Everyone!

I hope you are all having a fantastic week and preparing for the bunny on Sunday ;) In preparation for Easter this coming Sunday I'm sharing one of my favourite Easter recipes, Bird Bunny Nest Macaroons! These are simple, adorable and deadly delicious!

You Will Need

2 large eggs whites
2 bags unsweetened coconut
1 tbs flour
2 tbs sugar
tsp vanilla extract
1 can sweetened condense milk
small shell coated chocolate eggs - to decorate

Method

Place egg whites in a large mixing bowl and give a small beat so they are combined. All all other ingredient until thouragly combined and easily mouldable. Add extra coconut is too moist.

On a lined baking tray place small amount of the mixture and mold, with hands to create small nest shapes. *Nest should be big enough for 2 - 3 easter eggs

When you are happy with your nests, place in a moderate oven for about 20 minutes, or until golden brown.

Once removed from the oven, leave to cool and then place shell coated chocolate eggs on top of the nests.

Enjoy with family and friends!

So there you have it! These Bunny nests are a great easter party favour or hostess gift. Otherwise enjoy them all for yourselves! Yummy!

The Art Of Thinking Clearly by Rolf Dobelli

Morning everyone!

It's Wednesday and that means its time to talk books! I have been incredibly slack with my reading lately but finally getting back to my never end list of books. Please remember to comment or message me recommendations because they are always great! This week I'm sharing my current read, The Art of Thinking Clearly by Rolf Dobelli.

Now I'll be honest I'm not a huge fan of 'self help' books or books with too much advice on how to live your life. For example I really disliked the Happiness Project by Gretchen Rubin. Which some of my friends rave about and is an international best seller. I just can't describe it, I just didn't jell with that book. Hence my apprehension when I was suggested this read!

However I'm pleased to say I'am really enjoying The Art Of Thinking Clearly. Divided into two - to - three page 'lessons' this book anaylise the way we think as well as understand why. This book is not a lecture about where you are going wrong or why you are not 10000% happy all day everyday *something completely unachievable and natural, if you ask me!

This is an easy read that is reflective, encouraging and leaves me with a smile on my face. I can't wait to finish it this weekend! You can grab yourself a copy here!

The Galleria ,Abu Dhabi

Morning Everyone!

As most of you will know by now I have been spending almost all my free time lately, exploring the wonders of my new city. Regardless of whether you have plans to visit the UAE or not these are sites, malls and galleries, you HAVE to see! Today I'm sharing one of my absolute favourite spots in Abu Dhabi, The Galleria mall.

This mall is an absolute architectural masterpiece! And if you have been following my Instagram account/ keeping up to date with blog posts you will probably recognise some of these pictures!

The Galleria all set up for Chinese New Year Celebrations.

Now this mall isn't really the place to pop in and grab some cheap t-shirts or a Starbucks  This mall is home to all the big luxury brands and a coffee will set you back approximately $6! But trust me on this, it is worth it.

A good browse is Dior is an absolute must!

Seriously, the store fit out is so beautiful, I want to move in!

Along with big brands there are a few stores which I happen to love and can afford! Thank you lord! Be sure to stop by Tory Burch, Kurt Geiger and of course Magnolia bakery! You can find all store listings and location details here!

Love me some Tory Burch! I could also quite happily live in this store!

So there you have it, one of my happy places in Abu Dhabi and the perfect spot for an overpriced delicious cupcake and window shopping session!

Have a wonderful day friends!

5 Quick Questions

Happy Monday Everyone!

Today I'm sharing the answer to 5 more quick questions! Please keep them coming, some of them are really fantastic some of them are really though provoking and some of them are hysterical! I'm trying to answer and post a mix of all these questions so I hope you enjoy. Please note I will be taking a few days off fro blogging to enjoy some time with my Mumma, who is visiting me in the UEA. So I will be back and blogging on the 21st of March!

The best compliment you ever received?

Just before I moved overseas I had a going away/ early birthday party and a few of my closest girlfriends made a speech. One of my friends said that her favourite thing about me was my smile and laugh. Explaining how my laughter and cheeky smile could turn her day around. This isn't a compliment about my looks or achievements but one that highlighted our ability to effect other people and reminded me the effect my attitude can have on others. I hope that I can continue to bring a little happiness to other people through my positive attitude and 'ugly' snorting laugh!

What is on your perfect pizza?

I LOVVVVVVE me some pizza. I swear I could eat Italian food for the rest of my days! That being said traditional Italian pizza's are incredibly minimalist. And so are my pizza toppings. Give me a classic Margarita pizza, with lots of cheese and a great glass of wine and I'll love you forever!

What was the first hing you thought when you woke up this morning?

Can't I have just 5 more minutes in bed? + Why didn't I go to bed earlier last night??

If you could have only one meal for the rest of your life what would it be?

I have said it before and I'lll say it again. Ice cream is the one food I will happily eat for the rest of my life. So many different flavours, so many possibilities! But as I mentioned before, all Italian cuisine has my  heart. So bring on the Pizza, pasta and tirimisu people!

Favourite holiday?

Christmas! 1000000% Christmas is the clear winner for me! I love decorating, cooking, shopping and all other activities related to this holiday! December is my favourite time of year because we are always surrounded by family and friends during this time, as well as some great food! Christmas is also a time to celebrate our blessings, spend time with loved ones and reflect on Jesus himself aka 'reason for the season'!

I hope you all have a wonderful week ladies and remember I will see you back here, next Monday the 21st!
