Passionfruit Melting Moments

Morning Everyone! 

Todays recipe is a new favourite in our house and the perfect treat to make with kids. This fruity take on a classic is perfect for summer afternoon teas or lunch box treats.  These biscuits are so good, I actually have some baking in the oven this very moment! 


You Will Need 
250g unsalted butter (softened) 
1/2 cup pure icing sugar 
1 1/2 cups plain flour 
1/2 custard powder 

Icing 
60g unsalted butter 
1/2 pure icing sugar 
2 passion fruits (for pulp) 

Method 
Pre heat your oven to 160C and line two large baking trays with non stick paper. 

Use an electric mixer to beat the butter and icing sugar until combined. Gently mix in the flour and custard powder  until to have a soft dough. 

Roll dough into small balls and place on the baking trays. Use a fork to flatten the balls. Bake for 15 minutes or until golden. Cool completely on wire rack. 

Icing 
combine the butter and icing sugar with an electric mixture until smooth. Then add passionfruit pulp and mix through. Spread a generous amount of icing on half the biscuits and then sandwich with an un iced biscuit. 

*Recipe should make approximate 30 biscuits
